Kathal ka achar, the pickle that surprises

Illustration: a glass jar and a bowl of jackfruit pickle beside a cut raw jackfruit

People who haven’t tried it are often surprised that jackfruit makes a pickle at all.

Raw jackfruit

Kathal ka achar is made with raw, green jackfruit, not the ripe sweet fruit. The jackfruit is cut into chunks and cooked until just tender, then mixed with mustard oil and spices.

A meaty bite

Raw jackfruit has a firm, almost meaty texture, so each piece holds the spices well and stays chunky. It’s a favourite in many homes in Bihar and eastern Uttar Pradesh.

On the plate

It goes with rice, rotis and parathas, and it’s often the pickle that disappears first when the jars come out.
